ZUCCHINI CASSEROLE

3 Cups zucchini cut in cubes

2 carrots shredded

1 small chopped onion

1 small jar of chopped pimento

1 can cream of chicken soup undiluted

1/2 cup sour cream

1/2 package Pepperidge Farm or you could use Mrs. Cubbison's Stuffing mix (herb mix)

1/3 cup melted butter or margarine

 

Cut zucchini into bite size cubes.  Give them a light boil and drain. Mix the stuffing mix with the melted margarine or butter.  Divide the stuffing in half.  Mix all the remaining ingredients with half of the stuffing and put in a casserole dish and top with remaining stuffing.

Bake for 25 minutes in a 350° until brown and bubbly.
