Tea Cakes 
I can remember when mom would leave some of her cake mix in a bowl and add some more flour, some nutmeg, cinnamon, more sugar, and vanilla and she would create the best teacake or what we called a hoecake. I have no idea where the name comes from but the outcome was great for my older sister Lilly and I.
1 1/2 cups sugar 
1 stick butter
2 eggs, beaten
2 teaspoon vanilla
3 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
Cream butter and sugar until fluffy. Blend in eggs and vanilla. Combine all dry ingredients, and add in butter and sugar mixture. Mix well, chill for several hours. On a floured board or surface, roll out dough to about a 1/2" thick. Cut with a 3 inch round cookie cutter or glass or a clean can and place on well greased cookie sheet.
Bake at 350° for 10 to 12 minutes or until lightly brown.
