The recipe amounts are estimations. She didn’t measure much. Poured some dry ingredients in her hand and into a mixing bowl. Her eyes were her measuring utensils. Her meals always left me wondering, how did she do it.

2 pounds of ground beef
1 cup of dried bread (note: I didn’t say bread crumbs)
2 eggs beaten
¼ cup of bell peppers
¼ cup of onions
¼ teaspoon of sage
1cup tomato sauce
Salt and pepper to taste
Preheat oven 375°
In a large mixing bowl add ground beef, onions, bell pepper, salt, pepper, sage, eggs, dried bread, and tomato sauce. Make sure your hands are clean. Mix all ingredients by hand..
Place meat loaf in a loaf pan. Cook for about 20 minutes then spread tomato paste on the top and bake again until brown. Meat loaf is cooked when firm.
