PEACHES AND DUMPLINGS 

 

 

1 1/2 tablespoons cinnamon

1/2 tablespoon of nutmeg

1/2 teaspoon allspice
1/3 cup water
8 cups fresh peaches, peeled, sliced, and pitted
1 tablespoon margarine

1 cup sugar

1 teaspoon vanilla
 

Dumpling Batter:
2 tablespoons margarine
1 egg
1/2 cup all-purpose flour
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 tablespoon sugar
1/2 tablespoon cinnamon
 

Mix allspice, cinnamon, and nutmeg together. Stir in water. Add peaches and stir gently. Cook for 6 to 8 minutes until mixture boils and then stir in margarine. Prepare dumpling batter while peaches are cooking.
Soften margarine in a 1-quart bowl . Beat in egg. Add flour, sugar, baking powder and salt. Beat with a spoon until batter is smooth.  Add more flour if necessary batter should not be sticky.

Drop batter by spoonfuls in a circle over hot peach mixture.  Please drop batter in peach mixture in intervals....about two minutes or so between drops.  If you don't then you could a big doughy mess. I am speaking from experience.

If you don't want to make your own dumpling batter you could use canned biscuits instead.  It works well also, again make sure you time your drops.
