HEAD CHEESE (SOUSE) 
1 Fresh hog head (now finding this in your favorite grocery maybe difficult). Mom and dad went to a meat market )
1 onion, chopped
1 chopped bell pepper
1 Stalk celery chopped
2 Bay leaves chopped
2 green onions chopped
1 chopped pimento
2 Pods garlic chopped
1/2 cup vinegar
Thyme, salt, pepper to taste
Boil hog's head until meat is tender and don't forget to use his ears. Cook until meat falls off all the bone. Let cool. I guess you could say debone and discard fat and all other parts not named in this recipe..
ADD:
Chopped: 1 onion, 4 green onions, 2 stalks of celery, 2 pods garlic.
1 Tbsp. Lemon juice
Red and Black Pepper to taste,
1 pkg. Knox gelatin, dissolved in ¼ c. cold water.
Add dissolved gelatin. Pour into ungreased baking pans. Refrigerate until firm.
