FISH  STEW 

 

4 fresh Red Snapper or Flounder

4 tbsp flour

1/2 cup vegetable oil                         

1 medium onion chopped

5oz can of tomato sauce                 

1 tsp cayenne pepper

1 cup cut okra                   

seasoning salt                  

fresh parsley                       

                       

                      

 

Sprinkle fish with cayenne pepper and seasoning salt.  Let marinate for about 15 minutes. Put some flour on a plate and cover both sides of seasoned fish with flour.  Heat oil in a frying pan (maybe an iron skillet is handy) and fry floured fish for 4-5 minutes on each side.                     

 

In same pan or skillet, using the oil from frying the fish, add 1/2 tablespoon of flour and stir until roux is brown.  Fry chopped onions and okra until brown and soft.  Add tomato sauce and pepper and stir over low heat for 30 minutes.

Add one cup of water.  Finally add fish and the parsley to the stew and let simmer for 10 minutes.

Serve over rice....yummy
