CHOW CHOW    

 

12 cups chopped green tomatoes

7 cups of chopped cabbage

4 cups chopped onions

2 2/3 cups chopped bell peppers

2 2/3 cups chopped celery

5 cups of vinegar

5 cups of sugar

 

Use a grinder for each ingredient

Mix all chopped ingredients thoroughly and pour 2/3 tablespoons of salt over them. Let stand one hour.   Press together the vegetables or all ingredients. Add all ingredients to a bowl of solution of 5 Cups of Vinegar and 5-Cups of Sugar. Place in Mason Jars with a tight lid for at least 1 week to ferment before serving.

Mom sometimes would add some chopped yellow hots to the mixture for a little kick.
