Bar B Q Ribs 
26-pound rack pork spareribs
4 tablespoons butter or margarine
2 medium onion, finely chopped
4 cloves garlic, minced
2 15-ounce can tomato sauce
1 1/3 cups cider vinegar
1 1/3 cups firmly-packed brown sugar
4 tablespoons chili powder
2 tablespoon prepared mustard
1 teaspoon pepper
1 teaspoon liquid smoke
1/2 cup maple syrup
2 teaspoon salt
Combine all ingredients except pork. Marinate pork in mixture 30 minutes. Prepare medium-hot coals in grill bed. Remove pork from marinade, place over coals and grill for 12 to 15 minutes, turning once.

Place ribs on grill, meatiest side down, about 6 inches above low coals, or over indirect heat (banked coals). Close grill hood. Cook for 20 minutes; turn. Cook for 45 minutes. Baste with sauce Dad always basted his meat on the grill, close grill and cook 10 minutes. Turn ribs, baste and cook 10 minutes more.

Dad always cooked the night before and called us to let us know that after church he would be serving Bar B Q ribs and mom would be serving her famous baked beans and potato salad. His way I guess to make sure we attended church.
