TOMATO CHUTNEY 

 

15  LARGE RIPE TOMATOES

  6 LARGE TART OR SOUR APPLES

  5 MEDIUM ONIONS

  5 MANGO PEPPERS

  2 TEASPOONS GROUND RED PEPPER

  1 TABLESPOON BLACK PEPPER

  1 TABLESPOON SALT (NO IODIZE)

  1 PINT CIDER VINEGAR

  3 CUPS SUGAR

 

Scold (PARCH) and peel 15 large tomatoes and cut into small pieces. 

Pare and core the 6 apples. Cut and remove seeds from mango peppers.  Peel and cut onions.  Place apples, tomatoes, peppers, and onions in food chopper using a coarse blade.

Place in large kettle and add red and black pepper, salt, cider vinegar, sugar and stir altogether.

Boil slowly for 1 1/2 hours and stir with a wooden spoon.  Place in a canning jar and seal while hot.
