1 cup butter
1/2 cup vegetable shortening
2-3 cups sugar

1 teaspoon baking powder
5 eggs
3 cups all-purpose flour
1 cup 7-Up soda (any lemon-lime soda will suffice)
1 teaspoon lemon extract or vanilla extract
1 teaspoon butter flavor extract

 

Preheat oven to 350-degrees.  Coat a 9 x 5 x 2-inch loaf pan with cooking spray and dust with flour.  Sift together flour and baking powder.  Set aside.  Cream butter and sugar in a large mixing bowl.  Add in eggs, vanilla or lemon extract, and 7-UP.  Gradually add in flour mixture.  Beat until mixture is smooth either by hand or with a mixer.

Bake 40 minutes or until a toothpick inserted in center comes out clean.  Cool in pan for 10 minutes.  Turn onto a wire rack.  Remove the pan and cool.  Dust with confectioners’ sugar.
